  • Weight and size: The larger it is, the higher its weight and the more space it will occupy on your kitchen counter. If you have limited space on your countertop, you could either consider getting a smaller product or a large one that isn’t too heavy, so you can store it somewhere else when you’re done using it. I have no particular reason for preferring 10-setting models. 10 just seems right to me, and I feel like I can use mixers with 10 options better than others.

Regardless of the number yours comes with, it should have a helpful manual that shows you what settings apply to what tasks. That said, here’s a helpful guide for a typical 10-speed mixer. These recommendations were derived from KitchenAid’s Artisan model.

Option X: 10 is best used for fast whipping small quantities of egg whites and cream. Also, it’s the perfect speed for final whipping of mashed potatoes that you’ve already mashed using a slower speed setting, usually 2. The right attachment to use at this speed is a wire whip, which most products come with at no extra cost to you.

Option 8: When you wish to whip boiled frostings, egg whites, and cream, 8 is the speed setting to select. Of course you can use this with other ingredients as well. Just note that this speed is designed for whipping and fast beating, while 10 is designed for fast whipping. The attachment you should use at this setting is the wire whip.

Option 6: This speed is designed for medium fast creaming, beating, or whipping with your stand mixer. This is the one to use when you’re making doughnut, cake, or baking anything else that involves the use of flour and you wish to finish the mixing process perfectly. Speed 6 is for completing the mixing process, not starting it. It is also used for high-speed cake mixes. The attachments you should use at this setting are the beater and wire whip.

Option 4: This speed is primarily intended for mixing and beating, but it has a range of uses. First off, it is used for medium-speed cake mixes, compared to 6 which is used for high-speed mixes. It’s also suitable for adding sugar to egg whites, combining shortening and sugar, and for mixing moderately-heavy batter for foods that require it, such as cookies. The right attachments for this setting are the beater and wire whip.

Option 2: If you’ve purchased the best stand mixer and wish to make a recipe that requires slow mixing, fast stirring, and mashing, speed 2 is the option to select. This is the right setting for mixing heavy batter, starting the process of mashing vegetables and potatoes, kneading and mixing yeast dough, mixing splashy batter or thin batter, and cutting shortening into flour. The attachments to use with 2 are the beater and dough hook.

Option 1: Speed 1 is designed for slow stirring and it’s the setting that begins all mixing processes, such as mixing dry ingredients with liquids. Speed 1 is also used for mashing and combining. You can use it to add dry ingredients to batter, add flour to batter, and more. The fact that this setting is designed for starting mixing processes doesn’t mean that you can use it to knead or mix yeast dough. It’s not suitable for that, so use 2 instead when that’s what you wish to accomplish. Use the beater attachment that came with your stand mixer when speed 1 is selected.

Options 9, 7, 5, and 3: Since these speeds aren’t mentioned above, you might be wondering when they should be selected. These speeds are reserved for situations when fine adjustments are required in order to get the results you want. This applies to all ingredients except for yeast dough. Speed 2 is designed for mixing and kneading yeast dough and under no circumstances should you use any option higher than speed 2 for this, unless you want to risk damaging your machine.

Soft start: This is not an option you can select, but rather it’s a feature that is built into your machine (some of the best stand mixers have this feature, like the Kenwood, Cooklee, and Sunbeam; some don’t). When a fast speed is selected, any model that has this feature built in will start the motor slowly and then work up to your selected speed rather quickly in order to prevent puffing and splashing.
